Minestrone - delicious italian diet soup

Thanks for your good feedback on my articles on the chicken soup diet and the cabbage soup diet. Many of you have asked me if there are more similar soup diets out there.
What I want to present you today is not a real diet program, but the diet secret of Italian ladies: the Minestrone!
Minestrone is a traditional Italian vegetable soup and has been eaten in the country for hundreds of years. Minestra is the Italian for soup and the -one was just added as a prefix. The thick veggie soup is often also served with rice or noodles in it and is a classical Italian meal.
Don't expect something fancy when you order this soup in a restaurant - it is a rather simple dish, but cheap and filling which makes it an ideal dish if you are trying to lose weight. Believe me - you will love it!
Something like "the one and only minestrone recipe" doesn't exist. The soup is generally made from whatever vegetables are in season. However, I decided to present one of my favourite minestrone recipe to you:
1 kg of soup potatoes
1 kg of any seasonal vegetables that you like
(e.g. onions, garlic, beans, carotts, celery, pumkin, spinach, etc)
150 grams of bacon
Fresh herbs (e.g. basil, rosemary or thyme)
1 parmesan crust
salt and pepper
Chop all the ingredients finely and add them into a large pan. After sautéing them for a couple of minutes add water and simmer the whole soup for about 3 hours.
Already after half an hour a delicious scent will be noticeable all around your house.
The parmesan crust is my little secret to give to soup another Italian touch. Also leave it in the pot for an hour.
In the end you can either crush the vegetables or leave them as they are. The soup will taste great anyway!
If you like cheese you can grind some fresh parmesan cheese over the soup bowl before eating it.
The soup is low in calories (about 82 calories per serving) and fat and so it is the ideal meal for you if you are trying to stay in shape of even to get rid of some pounds.
